SageCliffe Sustainable Practices

SageCliffe is actively engaged in increasing both our “green” knowledge, and our environmental sustainability practices.

Chosen by National Geographic Traveler from among over 600 nominated properties as a hotel with "eco-stewardship and an ethic of giving back to the community."

What is sustainability?

Sustainability is:
“…of, relating to, or being a method of harvesting or using a resource so that the resource is not depleted or permanently damaged.”

 

The following are just some of the ways Cave B Inn & Spa at SageCliffe, and Cave B Estate Winery and Vineyards have put SageCliffe's “green heart” into practice:

Sustainable Cuisine:

Taking seasonal cues from our surrounding Ancient Lakes region and the Columbia Plateau, Chef Fernando Divina and his Team at Tendrils present local fare prepared from sustainable, natural, organic and humanely raised foods, including produce grown in our on-site organic Chef's Garden.

SageCliffe Building & Construction:

  • In Cave B Inn's Cavern Rooms, thermodynamics are used to heat and cool the building. The water coming from the deep well is 72 degrees year round; that temperature is utilized in the HVAC system for the building, reducing the need for electric power. The decision to use this system was made in the architectural design stage of the building process.
  • Salvaged railroad tie flooring used for the Cave B Inn lobby and Tendrils Restaurant
  • A local ironsmith created the grand lobby chandelier in Cave B Inn from recycled farm machinery.
  • Trellis poles in the pool area of Cave B Inn are reused Grant County telephone poles, made available when the county undertook a pole-replacement process in 2007.
  • The roof of the wine cave is a living “sod” roof, which insulates the cave, is an oxygen-producing structure, and upholds our goal of architecture which emerges from the environment, as opposed to dominating the environment
  • The walls of all SageCliffe buildings, as well as walkways, patios, stairways and landscaping walls, have been built from basalt rock culled from the property and the immediate region.

 



Cave B Inn at SageCliffe & Cave B Estate Winery Food and Beverage:

  • For all events, Cave B Inn uses reusable cutlery, dishware and linens instead of disposables, and bulk containers for condiments, instead of individual condiment packets.
  • Tendrils' Executive Chef Fernando Divina is an avid member of the Slow Food movement, and head of SageCliffe's Center for American Food & Wine, dedicated to the preservation of regional and heirloom plants and livestock.
  • The organic chef's garden produces a wide variety of fruits, vegetables and herbs, used regularly in Tendrils Restaurant's dishes.
  • SageCliffe Verjus is a winemaking bi-product extracted from hand-picked unripe wine grapes which have been gently crushed, then gravity-pressed. It is bottled and used as a marinade or dressing.


Reducing, Reusing and Recycling:

  • Cave B Winery sells its green glass bottles to The Green Glass Company, which recycles the wine bottles to make glasses and goblets. Cave B sold 5,000 of its green glass wine bottles to The Green Glass Company in 2007. A second colored wine bottle is earmarked for The Green Glass Company in 2008.
  • SageCliffe Vineyard Chips are 3lb. bags of chipped grapevine clippings used as a cooking fuel or for added smoked flavor while grilling.
  • In March 2008, SageCliffe held its first post-pruning Grapevine Gathering Day, where local crafters were invited to gather just-pruned grapevines for use in crafts & home and garden décor.
  • Wine case boxes and packing material are recycled or re-used for customer wine purchases.
  • SageCliffe currently recycles cardboard, glass and paper, and composts Tendrils kitchen food waste, winemaking bi-product (grape seeds and skins) and vineyard, orchard and garden yard waste.

Meetings & Events:

SageCliffe will ensure that environmental factors are considered in every decision to purchase a product or contract a service. Precedence will be given to those meeting planners who strive to follow green meeting practices.
